Campfire Cherry Crisp

Ingredients

  • 2 pounds pitted tart cherries

  • 1 1/4 cup flour

  • 1 cup brown sugar

  • 1 tsp cinnamon

  • 1/2 teaspoon salt

  • 3/4 cup oats

  • 1 stick unsalted butter, melted

Instructions (4-6 servings)

  1. Build a fire with 4-6 logs and allow them to reduce to hot coals. Set up a cooking rack with a cast iron skillet on top.

  2. Dump cherries into cast iron skillet.

  3. Whisk together the flour, brown sugar, cinnamon, salt, and oats in a small bowl. Pour the melted butter into the dry mixture and combine with a fork until clumps form.

  4. From the bowl, sprinkle the crisp topping all over the cherries. Cover with tin foil and place on top of the skillet. Bake the crisp for 10 minutes with the tin foil on. Remove the foil and allow the crisp to finish baking for 15 minutes.

  5. Top with cherry ice cream or another favorite flavor, and dig in!
